
It’s the perfect time of year to make homemade hot chocolate your specialty. Here are three gorgeous twists on the classic cold-weather fave.

Chili Hot Chocolate
Serves about 5
4 ounces 99% unsweetened chocolate, chopped
2½ cups whole milk
1/3 cup sugar
1½ tsp vanilla extract
3/4 tsp ground cinnamon
1/8 tsp ground chili pepper
Warm the milk in a saucepan until hot to the touch. Add the chocolate and sugar and whisk for 1-2 minutes until well blended. Add the vanilla, cinnamon, and chili pepper, whisking thoroughly. Warm over low heat without bringing to a boil, and serve.

Earl Grey Hot Chocolate
Serves 2
1½ cups whole milk
1½ tsp earl grey tea
6 squares of 85% dark chocolate
Warm the milk and tea leaves for ten minutes in a saucepan without bringing to a boil. Place three squares of chocolate into two mugs, and strain off the tea leaves as you pour in the milk. Stir well and serve.

Hazelnut Hot Chocolate
Serves 2
2 cups whole milk
2 tbsp heavy cream
1/4 cup Nutella, or more, to taste
Warm the milk, cream, and Nutella in a saucepan, whisking until the spread is melted and thoroughly blended. Continue to warm over low heat without bringing to a boil, and serve.
