Vin chaud (or mulled wine) not only tastes great—it feels great to drink on a cold winter’s night. There’s something about the way the wine holds the heat: just one cup will warm you from the inside out. Make a larger batch for an evening in with friends and serve with spiced or ginger cookies.
One bottle of red wine
One orange, peeled and sliced (but include the peel in recipe)
1/4 cup brandy
2/3 cup honey
2 teaspoons ground ginger
The wine will intensify and coarsen when heated, so choose a lighter, fruit-forward variety as opposed to a heavier tannic style. Combine the ingredients in a large pot, warming them on low heat for 20 or 25 minutes. Stir occasionally to make sure the honey dissolves completely. The low heat is important—anything higher will cause the alcohol to burn off (no need for that!). Above all, do not let it boil.
